Next Seasonal – Belgian Wit
4.6% alcohol by volume
This beer is our interpretation of a classic Belgian style known as Wit Beer
(“wit” is the Flemish word for white,
which describes the hazy opaque appearance of this beer). It is unfiltered, so
it is not unusual to have enough
yeast in suspension to create a dense haze. This is normal for the style. The
strain of yeast we used creates a
distinctive fruitiness during fermentation.
In the production of the wort for this beer, we added several spices to the
kettle during the boil. This is a technique
which predates the use of hops as a spice in beer (it was only after brewers
learned that hops improve the stability of
beer, that they have been routinely used). The two primary spices employed in
this beer are freshly zested orange peel
(we zested 80 oranges the day of the brew!) and coriander. For increased
complexity, we used more subtle additions of
ground cumin, ground cardamom, split vanilla pods, cinnamon sticks, and freshly
chopped ginger.
